TASTING NOTES
A vibrant nose of red fruit, violets, and toffee apple. Bright acidity lifts the mid-palate with notes of rhubarb, red cherry, orange peel and flint. It has some chalky tannins, and it feels very mineral and fresh like a Morgon.
VINEYARD
Grapes come from a single vineyard in Gultallary, at an altitude of around 1400 metres, in the Tupungato subregion of the Uco Valley. The climate here is continental with a large diurnal range. There is little summer rainfall, groundwater is replenished by winter snowfall higher up in the Andes. The vines were planted in 1970 and trained in a high espalier system. Soils are granite and limestone soils under a thin layer of sand.
VITICULTURE
Viticulture is non-certified organic. Harvest is by hand.
WINEMAKING
Grapes are co-fermented in a 23,000 kilo concrete vat with native yeasts. Partial carbonic maceration occurs, the wine is pressed halfway through the fermentation, then finished like a white without skins or stems. The wine is bottled straight after primary fermentation, without undergoing malolactic fermentation, and without fining or filtration.
